Peanut Butter Banana Pancakes with RealFitness: A Delicious Start to Your Day

Banana Peanut Butter Pancakes

We ALWAYS have a few spotted bananas on our counter. While I love banana bread, we often like to use the ripened bananas for other recipes. That’s when we make pancakes!

These light and fluffy peanut butter pancakes are a family favorite. They only take a few minutes to make and always come out tasting amazing.

Of course, our kiddos requested a sprinkle of mini chocolate chips and some extra banana slices on top. Totally optional but highly recommended. If you aren’t a fan of the banana and PB combo, omit the bananas and just add the melted RealFitness Peanut Butter and chocolate chips on top. It’s so good!

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (or any plant-based milk)
  • 1 egg
  • 1/2 cup mashed ripe bananas (about 1 large banana)
  • 1/2 cup RealFitness Peanut Butter
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract
  • Sliced bananas and mini chocolate chips for topping (optional)

  1. Mix Dry Ingredients: In a large bowl, combine the flour, sugar, baking powder, and salt.
  2. Combine Wet Ingredients: In another bowl, whisk together the milk, egg, mashed bananas, RealFitness Peanut Butter, melted butter or oil, and vanilla extract until smooth.
  3. Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  4. Cook the Pancakes: Heat a lightly greased griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until bubbles form on the surface of the pancakes, then flip and cook until golden brown on the other side.
